Easy Seattle Hawaiian Salmon Recipe

Don't be "salmon-less" in Seattle! Salmon is a healthy, Seattle favorite that preschoolers can enjoy! This recipe is made with sweet fruit, so your preschooler will not taste the "fishy" flavor. Make it a favorite family cooking activity by letting your preschooler decorate the salmon ahead of time, and then BBQing it at the beach!
Ingredients for 4 portions:
4 fresh salmon fillets
2 each oranges and lemons (sliced)
1 can each mandarin oranges, pineapple chunks
1 sliced onion (optional)
Ingredients for sauce:
Brown sugar and honey to thicken and sweeten
½ cup Ketchup or BBQ sauce
1 sliced lemon
Juice from canned fruit above
1 tsp. minced garlic
Salt, pepper, rosemary
Cook:1. Preheat oven to 350’. Lay fillets out in a baking pan.
2. Place fruit and onion slices on top of fillets.
3. Combine and Simmer sauce ingredients (careful not to burn)!
4. Pour sauce over fruit and salmon.
5. Cover dish with foil or lid, and bake for about 20 minutes or until done.
Expand On It!
BBQ the salmon in tin foil for more of an “outdoorsy” taste.
Add shredded coconut or coconut milk to your sauce.
Try using mangoes, nectarines, peaches, cherries, etc.
Make extra sauce to pour over steamed rice.
Make a tropical fruit punch to serve with salmon.
Involve Your Preschooler!
Let your preschooler place the fruit on top of the salmon before it is cooked.
Serve the punch with those cute little paper parosol umbrella straws.
Hold a luau and put on Hawaiian music to do the Hula with your preschooler. Don't forget your grass skirt!
